This Montana summer gardening has been bountiful! We have enjoyed eating fresh and nutritious right from our garden to our table, and with plenty to share with others. An abundance of preservation with freezing, canning and drying has kept the days brimming over with activity. Now, with the mornings and evenings cooler, autumn is in the air, bringing with it an appetite for warm comfort foods: soups, stews, and fall salads.

Thai Chicken Vegetable Soup
This is one of our favorite soups. This soup recipe can be found on page 117 (click the image to expand the image).

The flavor of this soup is delicious! It lends well to in-season vegetables. Rice noodles can be added to the soup or cooked rick can be served with it. Serve with fresh cilantro and lime quarters as a garnish.
